Lee’s Faith & Fitness: Italian Squash & Smoked Turkey Sausage

As I’ve been hinting at the past couple months, I was getting very close to getting my book published.  I will share more information on that in a few. In the meantime, this weeks edition of Lee’s Faith & Fitness brings you an amazing recipe that combines a healthy option with Italian food. This recipe is called Lee’s Italian Squash & Smoked Turkey Sausage.

This recipe begins with olive oil, zucchini squash, yellow squash, low sodium spaghetti sauce and cooked smoked turkey sausage.
Sauté your zucchini and yellow squash in about 2 tbsp of extra virgin olive oil.  You can season with low sodium seasoning but I chose not to this time, because the flavor from the sausage combined with the sauce brings plenty of flavor to this delicious recipe.
While the squash is sautéing, cut your sausage into coin shapes. Once the squash has softened, fold the sausage into the squash and let that simmer over medium heat for about 15-20 minutes and stir occasionally.
Finally, add one jar of the Prego traditional low sodium sauce and let simmer over low heat.
This recipe is based on one serving but for meal prepping you will want to add the desired number of servings to the recipe.
All recipes are entered into My Fitness Pal to calculate the nutrition facts.
