This week’s edition of Lee’s Faith & Fitness offers up a healthy version of a southern classic. I call this one, “Lee’s Muffin Pan Turkey Meatloaf.”
As always, my ingredient list is based on one serving. In the case of this muffin pan meatloaf, 2 meat muffins is 1 serving. 1 pound of extra lean turkey is the equivalent of 8 to 10 meat muffins.
Preheat your oven to 350. Combine all your ingredients, except the bbq sauce, into a large mixing bowl. Mix ingredient thoroughly. Spray your muffin pan with extra virgin olive oil spray.
Spoon enough meat into each muffin section so the meat is about even with the top of the pan.
Place muffin pan in oven and let cook until the internal temperature of the meat muffins is about 175-180 degrees.
Place each muffin on a cookie sheet and brush the bbq sauce on top.
Place back in the oven for about 5 minutes so the sauce can set and add a nice color to the meat muffins.
These are amazing when pair with grilled asparagus or any other healthy veggie for that matter.
